In a large bowl, mix together the ground ostrich meat, the half and half, and the onion. Shape into two large patties.
Heat the oil in a heavy skillet and brown the patties on both sides. Remove them and set aside to drain on several thicknesses of paper towels.
In the same skillet, melt the butter and add the wine, ΒΌ cup water, and heavy cream. Allow to thicken, stirring constantly. Add the Worcestershire sauce, parsley, and mushrooms and stir a moment or two. Return the patties to the skillet, cover, and simmer for 20 minutes, occasionally basting with the sauce. Serve immediately.
